* Fresh mint can as a last resort replaced with 1 tsp. peppermint essence. the jakarta consulting group Dr. Oetker has a fine edition in the same package as their fruit colors, and can easily be used as a substitute for the fresh mint. Of course I would recommend you to use the fresh and genuine product, if you have the possibility of it :) Procedure:
Tear the leaves of your mint bundle and turn them into a small saucepan. Place sugar and water, and boil it all together. Boil the whole mass until it begins to thicken and get the syrup-like consistency. It takes about 10-15 min. and the like to be stirred during most of the process. When the syrup has reached the right consistency, the jakarta consulting group pour it through a small close sieve, so mint leaves are sifted out. This window will now pour the syrup on scalded glass or a small bottle with lid / cap. Keep like syrup in the refrigerator, but stil the first chilled after it has cooled to room temperature.
Note: a delicious and different syrup that has a wealth of applications. Hi Jeppe :) Hmm, it was darn shame. My ummiddelbare bet would be that you boil it too hard for too long?
